Ingredients:
- 150g unsalted butter, softened
- 100g brown sugar
- 100g granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 200g plain flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 200g chocolate chips
Method:
- Preheat your oven to 180°C (160°C for fan ovens) and line a baking tray with parchment paper.
- Cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until fully combined.
- Sift in the flour, baking soda, and salt. Stir until the dough comes together.
- Fold in the chocolate chips.
- Place the dough in cling film and place in the fridge for at least 30 minutes.
- Scoop tablespoon-sized portions of dough onto a baking tray, spacing them a couple of inches apart.
- Bake for 10-12 minutes, or until golden brown around the edges.
- Let the cookies cool on the tray for a few minutes before transferring them to a wire rack to cool completely.
