Ingredients:
  • 125g unsalted butter, softened
  • 125g caster sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 125g self-raising flour
  • 2 tbsp milk
Method:
  1. Preheat your oven to 180°C (160°C for fan ovens) and line a cupcake tray with paper cases.
  2. In a large bowl, cream the butter and sugar together until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Sift in the flour and gently fold it into the mixture. Add the milk and stir until the batter is smooth.
  5. Divide the batter evenly between the cupcake cases, filling each about two-thirds full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cupcakes cool completely on a wire rack before decorating with your favourite frosting.
