The secret recipe you need for your next pie!
With the holiday season here, chances are you’ll be spending a lot of time in the kitchen whipping up some delicious desserts for the office party, family holiday parties, and possibly your own holiday treat. While many will opt for a decadent dessert, sometimes nothing beats a delicious and comforting pie. So, this holiday season, if you plan on baking some pies, whether it's apple, pumpkin, cherry, or even minced pies, this simple pie crust will be the secret recipe you didn’t even know you needed. And, what’s more, this simple recipe will soon become your go-to throughout the rest of the year. So, let’s get into it!
Ingredients:
- 250g plain flour (sifted)
- A pinch of salt
- 125g chilled vegan butter
- 100ml cold plant-based milk
Making the pie crust
1. Add the flour, salt and butter to your mixing bowl and use a fork or your fingertips to rub the butter into the flour until it resembles fine breadcrumbs.
2. Add the plant-based milk 1tbsp at a time until the mixture comes together as a dough. The dough may still be crumbly, but will hold its shape.
3. Wrap the dough in cling film and chill for at least 30mins.
6. Once chilled, sprinkle some flour on your rolling surface, split the dough in half and then roll out one ball of dough until it is 5 cm larger than your pie tin.
7. Put the dough in the pie tin and cut off any excess around the edges.
Blind baking
1. With a fork poke holes in the base of the pie crust and use greaseproof paper to line the top of the pie crust.
2. Fill the pie tin with a dry, heavy material like dried bens, uncooked rice or baking beads.
3. Bake on 180 for 15 mins. Remove the pie tin from the oven and take out the heavy material (caution, it will be extremely hot so allow to cool before storing it again).
4. Put the pie crust back in the oven uncovered for 5 mins.
Assembling the pie
1. Make your desired filling and fill 3/4 of the pie base.
2. Use the remaining dough to cover the top of the pie. Be sure to poke a few holes or allow gaps in the design to allow steam to escape.
3. Place in a preheated oven and cook on 180 °C for 30mins or until the top is golden.
